Ranch Fajita Bowls
INGREDIENTS
- Rice
- 2 Tbsp EVOO
- 2 boneless skinless chicken breasts, cut into strips
- salt and pepper
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 2 bell peppers, cut into strips
- 1 onion, cut into strips
- 1/4 c ranch dressing
- 1/2 c mild salsa
- 1/2 c shredded cheddar
- 1 Tbsp lime juice
- whole wheat tortillas
- sour cream
- additional cheese
PREPARATION
- Cook rice in rice cooker
- Heat EVOO in mondo skillet
- Season chicken strips with salt, pepper, chili powder, and garlic powder.
- Add to skillet, cook 1 minute per side.
- Add pepper and onions, cook 8-10 minutes.
- Add rice and salsa to skillet and cook, stirring, until heated through.
- Remove from heat and add ranch; stir until well combined.
- Stir in lime juice.
- Top with cheese.
- Serve in bowls or with tortillas.
