Red Beans & Rice
INGREDIENTS
- 1 lb. smoked sausage, sliced
- 2 onions, chopped
- 1 clove garlic, chopped
- 1 15 oz can kidney or red beans
- 1 14.5 oz can diced tomatoes
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- rice
PREPARATION
- Cook rice.
- Cook sausage over low heat for 8-10 minutes in large frying pan.
- Add onions, and garlic and sauté until tender; drain, if necessary.
- Add beans, tomatoes and seasonings and simmer uncovered for 20 minutes.
- Serve with rice.
