Reuben Casserole
INGREDIENTS
- 4 c water
- 1.5 c milk
- 1/3 c butter
- 1 Tbsp mustard
- 2 pouches roasted garlic mashed potatoes (the kind that call for milk/butter)
- 6 oz deli corned beef, cut into 1.5" pieces
- 1 can saurkraut, rinsed well & drained
- 2 c shredded Swiss
- 4 tsp caraway if desired
- Thousand Island Dressing
PREPARATION
- Heat oven to 375. Grease or spray 13" x 9" pan
- Heat water and butter to boil in saucepan, remove from heat.
- Add milk and mustard. Stir in potatoes, just until moistened.
- Let stand 1 minute or until liquid is absorbed. Whip with fork until smooth.
- Spread about 3 c of the potatoes in baking dish.
- Top with corned beef, then sauerkraut and sprinkle with 2 tsp caraway seeds.
- Spoon remaining potatoes over top. Sprinkle with cheese and remaining seeds.
- Bake 20-30 minutes until cheese is light golden brown.
