---++ Reuben Casserole ---+++ INGREDIENTS * 4 c water * 1.5 c milk * 1/3 c butter * 1 Tbsp mustard * 2 pouches roasted garlic mashed potatoes (the kind that call for milk/butter) * 6 oz deli corned beef, cut into 1.5" pieces * 1 can saurkraut, rinsed well & drained * 2 c shredded Swiss * 4 tsp caraway if desired * Thousand Island Dressing ---+++ PREPARATION 1. Heat oven to 375. Grease or spray 13" x 9" pan 1. Heat water and butter to boil in saucepan, remove from heat. 1. Add milk and mustard. Stir in potatoes, just until moistened. 1. Let stand 1 minute or until liquid is absorbed. Whip with fork until smooth. 1. Spread about 3 c of the potatoes in baking dish. 1. Top with corned beef, then sauerkraut and sprinkle with 2 tsp caraway seeds. 1. Spoon remaining potatoes over top. Sprinkle with cheese and remaining seeds. 1.
