Roasted Cabbage Steaks
INGREDIENTS
- 1 2-lb head cabbage, red or green
- 1.5 tbsp olive oil
- 2-3 large garlic cloves, smashed with the flat of a chef's knife
- kosher salt and cracked black pepper
PREPARATION
- Preheat oven to 400°F. Spray a baking sheet with cooking spray.
- Pull outer leaves off cabbage (the dirty one(s)). Slice top to bottom (with the root end down) into 1" slices.
- Rub both sides of each slice with smashed garlic, then, using pastry brush, brush with olive oil.
- Sprinkle each side with salt and pepper.
- Bake on middle rack for 30 minutes. Carefully turn over each "steak" and bake an additional 30 minutes.
- Serve hot.
