Roasted Tomato Soup
INGREDIENTS
- 1 28-oz can peeled whole tomatoes, drained
- 1/4 c EVOO
- 1 tsp Italian seasoning
- 1/2 small red onion, chopped
- 2 tsp jar garlic
- 1/4 c chicken broth
- 1/2 c ricotta
- 1/2 c heavy cream
PREPARATION
- Add tomatoes, olive oil, seasoning, onion, garlic and broth to slow cooker.
- Cook on LOW six hours.
- Puree with stick blender.
- Add ricotta and cream before serving.
