---++ Salmon Chowder ---+++ INGREDIENTS * 3 Tbsp EVOO * 1 white onion, chopped * 1 c chopped celery * 3 cloves garlic, minced * 3 Tbsp flour * 2 Tbsp lemon juice * 6 c chicken stock * 3 c Yukon Gold potatoes, diced * 2-3 salmon fillets, cut into pieces * 2 tsp dill * salt and pepper to taste * 1/2 c heavy cream * 1/2 c potato flakes ---+++ PREPARATION 1. Heat EVOO over medium-high in Dutch oven. 1. Add onion and cook 4 minutes, or until beginning to look translucent and limp. 1. Add celery and garlic and cook another 3-4 minutes. 1. Add flour and stir till thickened. 1. Add lemon juice, stock, and dill. Bring to a boil. 1. Add potato and cook about 10 minutes, till tender. 1. Add salmon, reduce heat to medium-low. 1.
