Seared Steak with Carrot Cauliflower Mash

INGREDIENTS

  • 1 lb baby carrots, chopped
  • 1 cauliflower, chopped
  • 3/4 tsp tarragon
  • 1 Tbsp butter, softened
  • 2 lbs steak
  • 1/2 tsp honey
  • 2 tsp EVOO

PREPARATION

  1. Drop chopped veggies into boiling water with a little salt.
  2. Boil until you can easily pierce them with a fork, about 15 minutes.
  3. MIx tarragon into butter.
  4. Sprinkle salt and pepper to taste on steak.
  5. Drain veggies, add 1/4 tsp salt, honey, and half the tarragon butter.
  6. Mash veggie mixture; cover to keep warm.
  7. Heat skillet on medium-high. Add oil and sear steak for 3-4 minutes/side.
  8. Serve steak over mash with the remaining tarragon butter
