Seared Steak with Carrot Cauliflower Mash 
 INGREDIENTS 
 
-  1 lb baby carrots, chopped
  -  1 cauliflower, chopped
  -  3/4 tsp tarragon 
  -  1 Tbsp butter, softened
  -  2 lbs steak
  -  1/2 tsp honey
  -  2 tsp EVOO
 
 
 PREPARATION 
 
-  Drop chopped veggies into boiling water with a little salt.
  -  Boil until you can easily pierce them with a fork, about 15 minutes.
  -  MIx tarragon into butter.
  -  Sprinkle salt and pepper to taste on steak.
  -  Drain veggies, add 1/4 tsp salt, honey, and half the tarragon butter.
  -  Mash veggie mixture; cover to keep warm.
  -  Heat skillet on medium-high.  Add oil and sear steak for 3-4 minutes/side.
  -  Serve steak over mash with the remaining tarragon butter
