Slow Cooker Pork Stew with Dumplings

INGREDIENTS

  • 2 lbs pork loin cut into bite-sized pieces
  • 2 large carrots, cut into 3/4" pieces
  • 2 ribs celery, cut into bite-sized pieces
  • 2 onions, chopped
  • 2.5 c chicken broth
  • 2 bay leaves
  • 2 eggs
  • 1 pkg stuffing mix for chicken
  • 1 c warm water
  • 1 tub (8 oz) chive & onion cream cheese spread

PREPARATION

  1. Combine pork, carrots, celery, onion, broth, and bay leaves in crock.
  2. Cover and cook on LOW 8-10 hours. Discard bay leaves
  3. Mix eggs, water, and stuffing mix; shape into 8 balls.
  4. Stir cream cheese into pork mixture until melted.
  5. Gently stir in stuffing balls, cover, cook on HIGH 30 minutes.
  6. Turn off crock. Let stand 15 minutes.
