Slow Cooker Pork Stew with Dumplings
INGREDIENTS
- 2 lbs pork loin cut into bite-sized pieces
- 2 large carrots, cut into 3/4" pieces
- 2 ribs celery, cut into bite-sized pieces
- 2 onions, chopped
- 2.5 c chicken broth
- 2 bay leaves
- 2 eggs
- 1 pkg stuffing mix for chicken
- 1 c warm water
- 1 tub (8 oz) chive & onion cream cheese spread
PREPARATION
- Combine pork, carrots, celery, onion, broth, and bay leaves in crock.
- Cover and cook on LOW 8-10 hours. Discard bay leaves
- Mix eggs, water, and stuffing mix; shape into 8 balls.
- Stir cream cheese into pork mixture until melted.
- Gently stir in stuffing balls, cover, cook on HIGH 30 minutes.
- Turn off crock. Let stand 15 minutes.
