---++ Slow Cooker Pork Stew with Dumplings ---+++ INGREDIENTS * 2 lbs pork loin cut into bite-sized pieces * 2 large carrots, cut into 3/4" pieces * 2 ribs celery, cut into bite-sized pieces * 2 onions, chopped * 2.5 c chicken broth * 2 bay leaves * 2 eggs * 1 pkg stuffing mix for chicken * 1 c warm water * 1 tub (8 oz) chive & onion cream cheese spread ---+++ PREPARATION 1. Combine pork, carrots, celery, onion, broth, and bay leaves in crock. 1. Cover and cook on LOW 8-10 hours. Discard bay leaves 1. Mix eggs, water, and stuffing mix; shape into 8 balls. 1. Stir cream cheese into pork mixture until melted. 1. Gently stir in stuffing balls, cover, cook on HIGH 30 minutes. 1. Turn off crock. Let stand 15 minutes.
