Southwest Meatloaf Muffins
INGREDIENTS
- 1/2 c diced bell pepper
- 1/2 c diced onioin
- 20oz carton of lean turkey
- 3/4 c canned crushed tomatoes
- 1/4 c oats
- 1/4 c egg substitute
- 1/4 c frozen sweet corn, thawed
- 1/4 c canned black beans, drained and rinsed
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cayenne
- 3 Tbsp ketchup
- 1/4 c shredded Mexicheese
- sour cream and salsa to top
PREPARATION
- Preheat oven to 350 degrees. Line 10 muffin cups with foil cups or spray with cooking spray.
- Cook and stir bell pepper on medium for 5-7 minutes.
- Transfer cooked veggies t a large bowl. Add all remaining ingredients except ketchup and cheese.
- Evenly distribute in the prepared muffin cups.
- Top each with about a tsp of ketchup.
- Bake for 35 minutes or until firm and cooked through with lightly browned edges.
- Sprinkle with cheese, bake about 2 minutes or until cheese melts.
