Spaghetti Squash Primavera
INGREDIENTS
- 2 small spaghetti squash
- 2 tsp EVOO
- 2 Tbsp minced shallot
- 2 cloves garlic
- 1/2 c diced red onion
- 1/2 c celery, diced
- 1/2 c carrots, grated
- 2 c broccoli
- 1 c diced zucchini
- 1 jar pasta sauce (Merlot Marinara?)
- 1 Tbsp grated Romano or Parmesan
- 6 oz Mozzarella Fresca
PREPARATION
- Cook spaghetti squash and cool slightly.
- Remove strands and place in large mixing bowl
- In skillet, heat oil over medium-low, add shallots, garlic, onion, celery and carrots and cook 5 minutes.
- Add broccoli and zucchini.
- Season with salt and pepper.
- Add sauce and simmer on medium until veggies are tender-crisp about 5-6 minutes.
- Add 4 cups of spaghetti squash and the Romano/Parmesan.
- Cook one minute.
- Put in 13" x 9" pan and top with mozzarella. Broil until the cheese melts.
