---++ Spaghetti Squash Primavera ---+++ INGREDIENTS * 2 small spaghetti squash * 2 tsp EVOO * 2 Tbsp minced shallot * 2 cloves garlic * 1/2 c diced red onion * 1/2 c celery, diced * 1/2 c carrots, grated * 2 c broccoli * 1 c diced zucchini * 1 jar pasta sauce (Merlot Marinara?) * 1 Tbsp grated Romano or Parmesan * 6 oz Mozzarella Fresca ---+++ PREPARATION 1. Cook spaghetti squash and cool slightly. 1. Remove strands and place in large mixing bowl 1. In skillet, heat oil over medium-low, add shallots, garlic, onion, celery and carrots and cook 5 minutes. 1. Add broccoli and zucchini. 1. Season with salt and pepper. 1. Add sauce and simmer on medium until veggies are tender-crisp about 5-6 minutes. 1. Add 4 cups of spaghetti squash and the Romano/Parmesan. 1. Cook one minute. 1.
