Ingredients
| 2 pkgs chopped spinach, thawed |
| cooking oil |
| 2 onions, chopped |
| garlic |
| 4 cans 14 oz chicken broth |
| 2 cans diced tomatoes |
| 2 tsp sugar |
| 16 oz pasta |
| 6 Tbsp Parmesan cheese |
| 1/2 tsp salt |
| pepper |
| 2 eggs |
Cook the onion and garlic in the oil. Add 4c water and the broth and bring to a boil
Add tomatoes, spinach and sugar. Stir well.
Add pasta and cook until tender.
Combine Parmesan salt pepper and eggs in a small bowl, drizzle over soup, stirring and cook for 2 minutes.
