Spinach Tortellini Tomato Soup
INGREDIENTS
- 2 Tbsp EVOO
- 1 Tbsp butter
- 1 onion, chopped
- 3 cloves garlic
- 2 cans Italian diced tomatoes
- 1 jar tomato basil pasta sauce
- 4 c veggie broth
- 1 pkg (12 oz) frozen tortellini
- 1 bag baby spinach
- salt and pepper
PREPARATION
- In white pot, heat EVOO and butter until butter melts.
- Add onion, cook 2 minutes or till translucent
- Add garlic, cook 2 minutes.
- Stir in tomatoes and pasta sauce, raise heat to medium high and bring to boil.
- Add broth and bring to boil.
- Add tortellini and spinach
- Cook for 10 minutes or until tender.
- Let stand 5 minutes.
- Salt and pepper to taste.
