Stuffed Acorn Squash
INGREDIENTS
- 2 medium acorn squash
- 4 slices bacon, diced
- 1 medium onion
- 1 granny smith apple, peeled, cored and diced
- 1 lb ground beef
- 1/4 c packed brown sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp sage
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 Tbsp bread crumbs
PREPARATION
- Heat oven to 375
- Place squash, cut sides down, in 2 13" x 9" pans. Add 2 c water to each pan. Bake 40 minutes
- Meanwhile, cook bacon in mondo skillet over medium for 4 minutes.
- Add onion and apple, cook an additional 4 minutes.
- Add beef, Cook, breaking up beef and stirring occasionally until brown.
- Add brown sugar, sage, spice, salt and pepper.
- Remove from heat and stir in bread crumbs.
- Drain water from pans. and flip over squash.
- Spoon mixture into squash halves.
- Bake for 20 minutes. Serve warm.
