Stuffed Shells
INGREDIENTS
- 1 box spinach, thawed, squeezed
- 1 16-oz container cottage cheese
- 1 onion, chopped
- 1 egg white
- 1 envelope Italian dressing mix
- 1 c mozzarella shreds
- 20 jumbo pasta shells, cooked, cooled
- 1.5 c traditional pasta sauce
PREPARATION
- Heat oven to 425
- Combine spinach, cottage cheese, onion, egg white and dressing mix.
- Stir in 1/2 c mozzarella.
- Spread 3/4 c sauce in 13" x 9" baking pan.
- Spoon spinach mixture into shells and place on sauce in pan.
- Top with remaining sauce; sprinkle with 1/2 c mozzarella
- Cover with foil.
- Bake 30 minutes; remove foil and bake 15 minutes longer.
- Let stand 5 minutes before serving.
