Tex-Mex Beef and Rice Casserole
INGREDIENTS
- 1 lb ground beef
- 1 tub (8oz) cream cheese spread
- 1 packet taco seasoning
- 2 Tbsp milk
- 1 can fire-roasted diced tomatoes
- 1 can mexi-corn
- 1/2 onion, chopped
- 3 c cooked rice
- 1 c cojack cheese
- 1 c crushed tortilla chips
PREPARATION
- Heat oven to 375; spray 13" x 9" pan with cooking spray.
- Brown beef in skillet.
- Meanwhile, mix cream cheese, milk, and taco seasoning until blended.
- Drain meat.
- Add cream cheese mixture, tomatoes, corn, and onions, mix well.
- Combine rice and 1/2 cup shredded cheese in prepared pan.
- Spread mixture to cover bottom of pan.
- Top with meat mixture, then sprinkle with remaining cheese.
- Cover with foil sprayed with cooking spray.
- Bake 30 minutes or until heated through.
- Top with tortilla chips.
