Tex-Mex Cabbage Beef Skillet with Cheese
INGREDIENTS
- 1/2 head green cabbage, shredded
- 2 Tbsp butter, divided
- 1 lb ground beef
- 3 Tbsp taco seasoning mix
- 1 tsp dried minced onion
- 2 c shredded Mexican blend cheese
- salt & pepper to taste
PREPARATION
- Heat oven to (it says) 350
- In oven-proof skillet, melt 1 Tbsp butter on medium-high. Saute cabbage until soft.
- Remove to dish.
- In same skillet, add remaining butter, then brown ground beef.
- Add taco seasoning and onion.
- If the meat is too dry, add up to 1/4 c water.
- Return cabbage to skillet, stir, and fold in 1/2 of the cheese.
- Top with remaining cheese.
- Bake about 10 minutes or until cheese melts.
