Texas Beef with Butternut Squash
INGREDIENTS
- 1 1/2 lbs stew meat
- 4 c cubed butternut squash
- 2 cans fire roasted tomatoes
- 1 1/2 c beef broth
- 1 large onion, chopped,
- 1 4-oz can diced green chiles
- ground ancho chili powder to taste (start with 1 tsp)
- 2 tsp cocoa powder
- 1 tsp cumin
- 1 tsp oregano
- 3 cloves minced garlic
PREPARATION
- In medium or large slow cooker, combine ingredients.
- Cover and cook on LOW 8-10 hours.
- Serve with rice or polenta.
