Tomato and Buttermilk Bisque
INGREDIENTS
- 1 can diced fire roasted tomatoes
- 2 cans tomato soup
- 2.5 c buttermilk
- 2 Tbsp chopped fresh basil
- 2 garlic cloves, minced
- 1/4 tsp black pepper
- 1/4 c shredded Parmesan
- croutons for garnish
PREPARATION
- In red or black pot, on medium, combine tomatoes, soup, buttermilk, basil, garlic, and pepper.
- Cook for 7 minutes, stirring frequently, until hot.
- Add Parmesan, cook 2 minutes longer.
- Serve topped with croutons.
