Triple Vanilla Pound Cake
INGREDIENTS
- 1.5 c cake flour
- 1/8 tsp salt
- 1/8 tsp baking soda
- 1/2 c (1 stick) unsalted butter at room temperature
- 1.25 c vanilla sugar
- 1 Tbsp vanilla paste (or 1.5 tsp vanilla extract)
- 3 large eggs at room temperature
- 1/2 c buttermilk at room temperature
PREPARATION
- Set a normal oven to 325 or ours to 375
- Lightly spray a 9" x 5" loaf pan with cooking spray and line it with a sheet of parchment or foil for easy removal
- Sift together the flour, salt, and baking soda. Set aside.
- In a stand mixer, cream the butter, sugar, and vanilla together until light and fluffy.
- Scrape down the sides of the bowl as necessary. Beat in the eggs one at a time.
- Blend in the buttermilk.
- Slowly add the flour. Make sure everything is well mixed. Do the last bit by hand.
- Turn the batter into the loaf pan and spread out evenly.
- Bake on the middle rack for 60-70 minutes, or until a toothpick inserted in the center comes out without wet batter clinging to it.
- Cool on a rack.
