Tuscan Garlic Roast Beef

INGREDIENTS

  • 1 Tbsp EVOO
  • 1 tsp balsamic vinegar
  • 5-6 lb beef pot roast
  • 1 Tbsp jar garlic
  • 2 tsp Tuscan seasoning
  • 1 tsp salt
  • 1 medium onion, sliced
  • 1 cup beef broth, divided
  • 3 Tbsp ketchup
  • 1/3 c flour

Preparation

  1. Put onion in bottom of slow cooker, pour 1/4 c broth over it. Refrigerate remaining broth.
  2. Mix oil and vinegar in small bowl, brush over beef.
  3. Combine garlic and seasonings, rub over roast.
  4. Place beef roast on onion, cover, cook on low 8 hours.
  5. Remove beef from slow cooker, cover to keep warm.
  6. In small bowl, mix ketchup, the remaining 3/4 cup beef broth and the flour.
  7. Add slurry to slow cooker, set to high and cook 5-10 minutes or until thickened.
  8. Serve gravy with beef.
