Vanilla Rooibos Tea Meltaways
INGREDIENTS
- 3/4 c (1 1/2 sticks) butter, softened
- 2 Tbsp vanilla rooibos tea leaves
- 1/2 c powdered sugar
- 3/4 tsp vanilla
- 1 c AP flour
- 1/2 c cornstarch
- 1/2 c powdered sugar
- 1 Tbsp strong vanilla rooibos tea
PREPARATION
- In small saucepan, cook and stir 1/4 c butter over medium until melted and bubbly.
- Remove from heat; stir in tea.
- Allow to steep 4 minutes. Strain through tea strainer
- In large mixing bowl, beat strained butter, the remaining 1/2 c butter and 1/2 c powdered sugar with mixer until light and fluffy.
- Beat in vanilla; beat in flour and cornstarch until combined.
- Shape dough into a 10" roll. Wrap in waxed paper or plastic wrap and refrigerate 2-3 hours on until firm enough to slice.
- Heat oven to 375
- Using a Forever knife, cut roll into 1/4-inch slices. Place slices 1 inch apart on ungreased foil-lined cookie sheet.
- Bake 10-14 minutes or until edges are light brown.
- Transfer to wire rack; cool ten minutes.
- *Glaze:" In a small bowl combine 1/2 c powdered sugar with brewed tea.
- Using a pastry brush, lightly coat cookies with glaze.
- Let stand on wire rack till glaze is set.
