---++ Veg Out Chowder ---+++ Ingredients * 2 tsp EVOO * 1 large onion * 1 bag mushrooms * 2 c. Southern style hasbrowns (frozen) * 2 cans chicken broth * 1 chicken bouillon cube * 1 tsp Worcestershire sauce * 1/2 tsp dried thyme * 1 c frozen green peas * 1 c frozen corn kernels * 1/2 c sour cream ---+++ Preparation Heat oil in soup pot over medium. Add chopped onion. Cook 3 minutes. Add mushrooms. Cook 1 minute. Add hash browns and turn up heat. Cook until hash browns are defrosted. Add broth, bouillon, Worcestershire and thyme, bring to a boil, then add peas and corn. Cover. Reduce heat. Simmer about 4 minutes. Remove from heat, add sour cream. -- Main.JMagGuthrie - 26 Nov 2011
