Veggie Chicken Chowder
INGREDIENTS
- 4 c chicken broth or stock
- 2 chicken breast halves, cut into bite-sized pieces
- 1/2 c chopped onion
- 1/2 c chopped bell pepper
- 1/2 c chopped celery
- 1/2 c chopped carrot or matchsticks
- 1/2 c chopped zucchini
- 2 cloves garlic, minced
- 3/4 tsp thyme
- 3/4 tsp marjoram
- 1 bay leaf
- 3/4 c milk
- 2 Tbsp cornstarch
- salt and pepper to taste
PREPARATION
- Place everything but milk, cornstarch and salt and pepper in crock.
- Cook on low for 6-8 hours.
- Set to high, cook for 10 minutes
- Make a cornstarch milk slurry and add.
- Cook 5-10 minutes till slightly thickened.
- Salt and pepper to taste.
