White Chicken Enchiladas
INGREDIENTS
- 2 c mild green chile enchilada sauce
- 2.5 c shredded cooked chicken
- 2 c shredded Jack cheese
- 2 cans (4.5 oz) chopped green chiles
- 8 tortillas for burritos (8")
- 1/2 c heavy cream
PREPARATION
- Heat oven to 375.
- Spray bottom and sides of 13" x 9" pan with cooking spray
- Spread 1/2 c of the enchilada sauce in pan.
- In large bowl, combine chicken, 1.5 c cheese, 1 c enchilada sauce, and green chiles.
- Spoon about 1/3 c mixture down center of each tortilla. Roll up tortillas.
- Arrange seam-side down in pan.
- In small bowl, mix remaining 1/2 c enchilada sauce and cream.
- Pour mixture over enchiladas Sprinkle with remaining cheese.
- Spray foil with cooking spray; cover dish with foil.
- Bake 30 minutes.
- Remove foil; bake 5-10 minutes longer or until cheese is melted and lightly brown.
