---++ White Chicken Enchiladas ---+++ INGREDIENTS * 2 c mild green chile enchilada sauce * 2.5 c shredded cooked chicken * 2 c shredded Jack cheese * 2 cans (4.5 oz) chopped green chiles * 8 tortillas for burritos (8") * 1/2 c heavy cream ---+++ PREPARATION 1. Heat oven to 375. 1. Spray bottom and sides of 13" x 9" pan with cooking spray 1. Spread 1/2 c of the enchilada sauce in pan. 1. In large bowl, combine chicken, 1.5 c cheese, 1 c enchilada sauce, and green chiles. 1. Spoon about 1/3 c mixture down center of each tortilla. Roll up tortillas. 1. Arrange seam-side down in pan. 1. In small bowl, mix remaining 1/2 c enchilada sauce and cream. 1. Pour mixture over enchiladas Sprinkle with remaining cheese. 1. Spray foil with cooking spray; cover dish with foil. 1.
