---++ White Chili (no beans) ---+++Ingredients * 4 cans chicken broth * 4 chicken breasts (skinless, boneless), diced * 1 cup barley * 2 cans whole kernel white corn, drained * 2 4oz cans chopped green chiles * 1 Tbsp. oregano * 1 onion chopped * salt and pepper * 2 cans garbanzo beans, drained (optional) * 1 Tbsp. cumin ---+++Condiments: * grated jack cheese * limes * chopped jalapenos * chopped red onion * chopped tomatoes * sour cream ---+++Directions Dice chicken. Poach chicken in broth for 1/2 hour (or until chicken cooked through). Add barley, onions, chopped chiles, oregano, cumin, salt and pepper. Cook 1/2 hour or so until barley is tender. Add can of corn, heat through. Serve with condiments. Good with cornbread. You can squeeze in a whole lime if desired. Make sure soup is bubbling hot before you serve because condiments cool it rapidly. (If you do want beans, add 2 cans garbanzo beans with other main ingredients.)
