Whole Roasted Cauliflower
INGREDIENTS
- 1 Tbsp EVOO
- 1 head cauliflower
- 2 6-oz containers plain Greek yogurt
- 1 large lime, zested and peeled
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 1 Tbsp garlic powder
- 1 Tbsp curry powder
- 2 tsp kosher salt
- 1/2 tsp black pepper
PREPARATION
- Heat oven to 400
- Lightly grease a baking sheet with oil.
- Trim the base of the cauliflower, removing green leaves and woody stem.
- In a medium bowl, combine other ingredients.
- Dip cauliflower into mixture; use brush or hands to evenly coat head.
- Place the cauliflower on the prepared baking sheet.
- Roast for 30-40 minutes, until the surface is dry and lightly browned.
- Cool for 10 minutes before cutting into wedges to serve.
- Serve with a green salad.
