---++ Whole Roasted Cauliflower ---+++ INGREDIENTS * 1 Tbsp EVOO * 1 head cauliflower * 2 6-oz containers plain Greek yogurt * 1 large lime, zested and peeled * 1 Tbsp chili powder * 1 Tbsp cumin * 1 Tbsp garlic powder * 1 Tbsp curry powder * 2 tsp kosher salt * 1/2 tsp black pepper ---+++ PREPARATION 1. Heat oven to 400 1. Lightly grease a baking sheet with oil. 1. Trim the base of the cauliflower, removing green leaves and woody stem. 1. In a medium bowl, combine other ingredients. 1. Dip cauliflower into mixture; use brush or hands to evenly coat head. 1. Place the cauliflower on the prepared baking sheet. 1. Roast for 30-40 minutes, until the surface is dry and lightly browned. 1. Cool for 10 minutes before cutting into wedges to serve. 1. Serve with a green salad.
