Bacon Spinach Strata
Ingredients

sliced mushrooms |
| 1 bunch |
scallions sliced |
| 2 tsp |
oil |
| 1 loaf |
old bread cut into cubes .75" |
| 1 c |
shredded swiss |
| 1 lb |
bacon cooked & crumbled |
| 2 c |
shredded cheddar |
| 1 pkg |
spinach thawed and squeezed |
| 9 |
eggs |
| 3 c |
milk |
| 1/2 tsp each |
onion powder, garlic powder, dry mustard |
| 1/4 tsp each |
salt and pepper |
Saute mushrooms & onions in oil until soft. Place half bread cubes and half swiss in greased 13"x9" pan. Layer with bacon, cheddar, mushroom mixture, spinach and remaining swiss & bread.
Combine eggs milk and seasonings. Pour over casserole, cover and refrigerate.
Remove 30 minutes before baking.
Bake uncovered at 375 for 45-50 minutes or until knife is clean.
Let stand for 10 minutes before cutting.
