Baked Chicken and Sweet Potatoes

INGREDIENTS

  • 1/2 c zesty Italian dressing
  • 3 Tbsp brown sugar
  • 1 tsp dried thyme
  • 1.5 lbs sweet potatoes (about 3), cut into 3/4" wedges
  • 8 chicken thighs

PREPARATION

  1. Heat oven to 425 (recipe says 375)
  2. Mix dressing, sugar and thyme in large bowl.
  3. Add potato wedges; toss to coat.
  4. Transfer to rimmed 15" x 10" x 1" baking sheet, reserving mixture in bowl
  5. Add chicken to reserved mixture; toss to coat.
  6. Place on pan with potatoes.
  7. Bake 1 hour or until potatoes are tender and chicken is done (165)
  8. Serve with drippings
