Baked Reuben Sandwich

INGREDIENTS

  • 2 c baking mix
  • 1 c milk
  • 1 egg
  • 2 tsp caraway seeds
  • 1/2 lb sliced corned beef
  • 1/4 c brown mustard
  • 3/4 c shredded Swiss
  • 1 can sauerkraut, well-drained.
  • 1/2 c thousand island

PREPARATION

  1. Heat oven to 425
  2. Spray 8" square glass baking dish with cooking spray.
  3. In medium bowl, stir baking mix, milk, egg and 1 tsp of the caraway seeds.
  4. Spread 1 c batter in prepared pan.
  5. Brush corned beef with mustard, layer on batter in dish.
  6. Top with cheese, then sauerkraut.
  7. Carefully spread remaining batter over all.
  8. Sprinkle with remaining caraway seeds.
  9. Bake 28-32 minutes or until light golden brown and center is set.
  10. Let stand 5 minutes before cutting.
  11. Serve with dressing.
