Baked Reuben Sandwich
INGREDIENTS
- 2 c baking mix
- 1 c milk
- 1 egg
- 2 tsp caraway seeds
- 1/2 lb sliced corned beef
- 1/4 c brown mustard
- 3/4 c shredded Swiss
- 1 can sauerkraut, well-drained.
- 1/2 c thousand island
PREPARATION
- Heat oven to 425
- Spray 8" square glass baking dish with cooking spray.
- In medium bowl, stir baking mix, milk, egg and 1 tsp of the caraway seeds.
- Spread 1 c batter in prepared pan.
- Brush corned beef with mustard, layer on batter in dish.
- Top with cheese, then sauerkraut.
- Carefully spread remaining batter over all.
- Sprinkle with remaining caraway seeds.
- Bake 28-32 minutes or until light golden brown and center is set.
- Let stand 5 minutes before cutting.
- Serve with dressing.
