Barbacoa Pork

INGREDIENTS

Marinade

  • 2.5 lbs pork loin
  • salt & pepper
  • garlic powder
  • 3/4 c Coke zero
  • 1/4 c brown sugar
  • 1/4 c water

Sauce

  • 1 c Coke zero
  • 1 4 oz can diced green chiles
  • 8 oz can tomato sauce.
  • 1 chipotle
  • 1/8 tsp garlic powder
  • 1/8 tsp cumin
  • 1/8 tsp chipotle powder
  • salt and pepper to taste
  • 1/3 c brown sugar

PREPARATION

  1. Season pork with salt, pepper and garlic powder and place in crockpot.
  2. Combine 3/4 c Coke zero and 1/4 c brown sugar, pour over pork.
  3. Marinate several hours or overnight in refrigerator. Turn to marinate evenly.
  4. Remove from fridge and add water and cook on high for 4 hours.
  5. Remove pork from crock and DISCARD LIQUID
  6. Shred pork with two forks.
  7. In same crockpot, combine 1 c Coke zero, chiles, tomato sauce, chipotle, garlic powder, cumin and chipotle powder and 1/3 c brown sugar.
  8. Add pork back to sauce, salt and pepper to taste.
  9. Cook on high for 1 1/2 hours.
