Beef Pot Pie

INGREDIENTS

  • 2 Tbsp EVOO
  • 1.5 lbs beef stew meat
  • 1 Tbsp Worcestershire
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1.5 lbs potatoes, peeled and diced
  • 2 large carrots, peeled and cut into 1/4" half-moons
  • 2 medium parsnips, peeled and cut into 1/4" half-moons
  • 1 small red onion, chopped
  • 3 cloves minced garlic
  • 1 can beef broth
  • 2 Tbsp cornstarch in 1/2 c water
  • 1 c frozen peas, thawed
  • 1 pie crust
  • 1 egg beaten with 2 Tbsp water

PREPARATION

  1. Heat oven to 450
  2. Add oil to 10" or 12" cast iron skillet over high heat.
  3. Toss beef with Worcestershire, 1/2 tsp salt, and pepper.
  4. Add to skillet; brown, stirring 2-3 minutes.
  5. Remove with slotted spoon and reduce heat to medium.
  6. Add potatoes, carrots, parsnips, onion, and garlic; cook 5 mintues.
  7. Add broth; bring to a boil and simmer 5 minutes, until crisp-tender.
  8. Add cornstarch mixture, followed by beef, and peas.
  9. Remove from heat and top with pie crust.
  10. Cut a few vent holes and bake for 13-15 minutes, until golden and bubbly.
