Best Barbecue Pork

INGREDIENTS

  • 2 tablespoons whole-grain oat flour
  • 1⁄2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Pinch of black pepper
  • 2 pounds pork tenderloin, cut into ¾" cubes
  • 1 tablespoon extra-virgin olive oil
  • 1 1⁄3 cup orange juice, preferably fresh-squeezed
  • 1 1⁄3 cup cider vinegar
  • 2 tablespoon hickory smoke flavoring
  • 1/4 cup barbecue sauce (7 grams carbs or less per 2 tablespoons), or more to taste
  • 2 cups onion strips
  • dill pickle slices
  • 2 pkg. Hawaiian buns

PREPARATION

  1. Put flour and spices in zipper bag. Mix well.
  2. Toss pork chunks in flour mixture, then refrigerate 15 minutes.
  3. Heat skillet on medium. Add oil, then pork chunks.
  4. Cook about 5 minutes, turning chunks, until browned.
  5. Add orange juice, vinegar, and smoke flavor.
  6. Bring to boil, then reduce to simmer and cover.
  7. Cook, stirring occasionally, 1 hour or until tender.
  8. Meanwhile, about 15 minutes before pork is done, cook onion strings in non-stick skillet until as done as you like them.
  9. Heat non-stick skillet on medium; toast bun halves 3-5 minutes.
  10. Shred pork, adding barbecue sauce.
  11. Serve on toasted buns with onions and pickles. Add additional barbecue sauce if desired.
