Best Barbecue Pork
INGREDIENTS
- 2 tablespoons whole-grain oat flour
- 1⁄2 teaspoon garlic powder
- 1/2 teaspoon salt
- Pinch of black pepper
- 2 pounds pork tenderloin, cut into ¾" cubes
- 1 tablespoon extra-virgin olive oil
- 1 1⁄3 cup orange juice, preferably fresh-squeezed
- 1 1⁄3 cup cider vinegar
- 2 tablespoon hickory smoke flavoring
- 1/4 cup barbecue sauce (7 grams carbs or less per 2 tablespoons), or more to taste
- 2 cups onion strips

- 2 pkg. Hawaiian buns
PREPARATION
- Put flour and spices in zipper bag. Mix well.
- Toss pork chunks in flour mixture, then refrigerate 15 minutes.
- Heat skillet on medium. Add oil, then pork chunks.
- Cook about 5 minutes, turning chunks, until browned.
- Add orange juice, vinegar, and smoke flavor.
- Bring to boil, then reduce to simmer and cover.
- Cook, stirring occasionally, 1 hour or until tender.
- Meanwhile, about 15 minutes before pork is done, cook onion strings in non-stick skillet until as done as you like them.
- Heat non-stick skillet on medium; toast bun halves 3-5 minutes.
- Shred pork, adding barbecue sauce.
- Serve on toasted buns with onions and pickles. Add additional barbecue sauce if desired.
