Blueberry Soup
Ingredients
1 c |
frozen pineapple juice concentrate, thawed |
1 c |
water |
2 tsp |
lemon juice |
6 c |
blueberries - fresh or thawed frozen |
1 tsp |
vanilla |
Combine pineapple juice concentrate, water and lemon juice. Add 4 c blueberries and soupify with a stick blender.
Add remaining berries and vanilla.
Serve cold.
