Bombay Chicken & Rice

Ingredients

  • 1 10-oz can chunk chicken breast - drained
  • 1 6-oz box curry rice pilaf mix
  • 1 14-oz can diced tomatoes - drained
  • 1 8-oz can peas - drained
  • 1/2 c UNsalted cashews

Preparation

Prepare the rice according to package directions. after 15 minutes of simmering, stir in the chicken, tomatoes and peas. Simmer for 10-15 more minutes -- until rice is done.

Top with Cashews.
