Brazilian Chicken

INGREDIENTS

  • 1 onion, sliced thin, rings or strings
  • 2 green bell peppers, in thick strips
  • 3/4 c coconut milk
  • 1 c chicken broth
  • 2 Tbsp tomato paste
  • 1 Tbsp jar garlic
  • 1 Tbsp ground ginger
  • 3 Tbsp curry powder
  • 4 chicken breast halves
  • salt and pepper

PREPARATION

  1. Make an even bed of onion and green peppers in the bottom of the slow cooker.
  2. Stir together the coconut milk, broth, tomato paste, garlic, ginger and curry powder until tomato paste is dissolved.
  3. Season chicken with salt and pepper, and place on onion/peppers in slow cooker.
  4. Pour the coconut milk mixture over chicken.
  5. Cover and cook on LOW for 7 hours.

Serve with cauliflower or zucchini.
