Brazilian Chicken
INGREDIENTS
- 1 onion, sliced thin, rings or strings
- 2 green bell peppers, in thick strips
- 3/4 c coconut milk
- 1 c chicken broth
- 2 Tbsp tomato paste
- 1 Tbsp jar garlic
- 1 Tbsp ground ginger
- 3 Tbsp curry powder
- 4 chicken breast halves
- salt and pepper
PREPARATION
- Make an even bed of onion and green peppers in the bottom of the slow cooker.
- Stir together the coconut milk, broth, tomato paste, garlic, ginger and curry powder until tomato paste is dissolved.
- Season chicken with salt and pepper, and place on onion/peppers in slow cooker.
- Pour the coconut milk mixture over chicken.
- Cover and cook on LOW for 7 hours.
Serve with cauliflower or zucchini.
