Buffalo Chicken Sliders

Ingredients

  • 1 lb ground chicken
  • 1 onion and 1 bell pepper or 2 onions, chopped small
  • 2 Tbsp Wing sauce
  • 8 pieces of leaf lettuce
  • 8 slices of tomato
  • 8 wedges of lowfat blue cheese
  • 8 mini/slider rolls

Preparation

  1. Spray skillet with cooking spray. Cook onions and pepper if using until there is no liquid in the pan, stirring frequently. Cool.
  2. Combine with chicken and wing sauce and shape into 8 patties. Lay on wax-paper lined sheet and put in freezer for 15-30 minutes to firm up.
  3. Spray skillet with cooking spray and cook patties on medium till done on both sides -- they will still be pink from the wing sauce.
  4. Layer with lettuce, tomato and cheese on bun. May add additional wing sauce.
