Buttery Spinach-Havarti Bake

INGREDIENTS

  • 2/3 c panko
  • 2 Tbsp butter, melted
  • 1/2 c butter
  • 1/2 c AP flour
  • 2 12-oz cans evaporated milk
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 1/8 tsp cayenne
  • 6 10-oz packages spinach, thawed and squeezed
  • 8 oz Havarti, sliced

PREPARATION

  1. Heat oven to 400.
  2. Lightly spray 13" x 9" pan with cooking spray
  3. Topping: Combine panko and 2Tbsp butter.
  4. Heat the 1/2 c butter over medium until melted; add flour.
  5. Cook and stir for 2 minutes.
  6. Gradually stir in evaporated milk.
  7. Cook and stir until thickened and bubbly.
  8. Stir in salt and peppers.
  9. Stir in spinach.
  10. Spread half of mixture in prepared pan.
  11. Top with half the cheese.
  12. Repeat layers.
  13. Sprinkle with topping.
  14. Bake uncovered for 30-45 minutes or until cheese is melted and topping is golden.
  15. Let stand 5 minutes before serving.
