Cajun-Style Pork Chops
Ingredients

pepper & onion stir-fry mix |
2 Tbsp |
EVOO |
4 |
pork chops |

salt and pepper |
1 15oz can |
tomato sauce |
1 1/2 tsp |
Cajun seasoning |
Preparation
Over medium heat, cook pepper and onion mix in 1 Tbsp EVOO, about 5-6 minutes until the onions are softened. Remove to a bowl. Sprinkle salt and pepper on pork chops, then brown in remaining EVOO over medium heat.
Add tomato sauce seasoning and onion & pepper mix. Bring to a boil, cover, reduce heat and simmer for 8 minutes.
Uncover and cook down on high till sauce is reduced, about 5-to-7 minutes.
