Caramelized Onion Pot Roast
INGREDIENTS
1 pot roast
1 Tbsp EVOO
1 tsp salt
1/2 tsp pepper
6 onions, sliced
1 1/2 c beef stock
3/4 c beer
2 Tbsp brown sugar
3 Tbsp Dijon mustard
2 Tbsp cider vinegar
PREPARATION
Heat oil in skillet over medium-high; brown beef on all sides, about 10 minutes, total.
Season with salt and pepper.
Place onions in large crock.
Place beef on onions.
Combine remaining ingredients and pour over beef & onions.
Cook on LOW 8-10 hours.
