Caramelized Onion Pot Roast

INGREDIENTS

  • 1 pot roast
  • 1 Tbsp EVOO
  • 1 tsp salt
  • 1/2 tsp pepper
  • 6 onions, sliced
  • 1 1/2 c beef stock
  • 3/4 c beer
  • 2 Tbsp brown sugar
  • 3 Tbsp Dijon mustard
  • 2 Tbsp cider vinegar

PREPARATION

  1. Heat oil in skillet over medium-high; brown beef on all sides, about 10 minutes, total.
  2. Season with salt and pepper.
  3. Place onions in large crock.
  4. Place beef on onions.
  5. Combine remaining ingredients and pour over beef & onions.
  6. Cook on LOW 8-10 hours.
