Caramelized Onion Pot Roast

INGREDIENTS

  • 1 pot roast
  • 1 Tbsp EVOO
  • 1 tsp salt
  • 1/2 tsp pepper
  • 6 onions, sliced
  • 1 1/2 c beef stock
  • 3/4 c beer
  • 2 Tbsp brown sugar
  • 3 Tbsp Dijon mustard
  • 2 Tbsp cider vinegar

PREPARATION

  1. Place onions in crock; toss with brown sugar and vinegar.
  2. Cook on HIGH for one hour or until onions begin to caramelize.
  3. Heat oil in skillet over medium-high; brown beef on all sides, about 10 minutes, total.
  4. Season with salt and pepper.
  5. Place beef on onions.
  6. Combine remaining ingredients and pour over beef & onions.
  7. Cook on LOW 8-10 hours.
