Chai Spiced Apple Cider

INGREDIENTS

  • 1 gallon cider
  • 2 Tbsp ginger paste
  • 8 cinnamon sticks
  • 32 whole cloves
  • 24 cardamom pods
  • 16 black peppercorns
  • 4 whole star anise
  • 1½ tsp vanilla extract
Optional for serving
  • 2 c whipped cream
  • 2 Tbsp maple syrup
  • ground cinnamon

PREPARATION

  1. Combine in a non-aluminum pan: cider, ginger, cinnamon, cloves, cardamom, peppercorns, anise, and vanilla.
  2. Bring to a boil, then simmer for 15 minutes or until fragrant.
  3. Strain through fine mesh strainer.
  4. If using cream, etc. fold syrup into whipped cream. Top a mug of cider with a dollop of maple cream and sprinkle with a bit of cinnamon.
