Chai Spiced Apple Cider
INGREDIENTS
- 1 gallon cider
- 2 Tbsp ginger paste
- 8 cinnamon sticks
- 32 whole cloves
- 24 cardamom pods
- 16 black peppercorns
- 4 whole star anise
- 1½ tsp vanilla extract
Optional for serving
- 2 c whipped cream
- 2 Tbsp maple syrup
- ground cinnamon
PREPARATION
- Combine in a non-aluminum pan: cider, ginger, cinnamon, cloves, cardamom, peppercorns, anise, and vanilla.
- Bring to a boil, then simmer for 15 minutes or until fragrant.
- Strain through fine mesh strainer.
- If using cream, etc. fold syrup into whipped cream. Top a mug of cider with a dollop of maple cream and sprinkle with a bit of cinnamon.
