Cheap Reuben Casserole
INGREDIENTS
- 2 Tbsp fat or oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 bay leaves
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1/4 tsp ground dried juniper berries
- 2 lbs ground chuck
- 1/2 c Russian dressing
- 1/2 c sour cream
- 1 lb sauerkraut, squeezed
- 1 tsp caraway seeds
- 8 oz grated Swiss cheese
- salt and pepper to taste
PREPARATION
- Heat oven to 375
- In a large saute pan, over medium, heat the fat/oil. Add onion and garlic.
- Sweat until translucent, about 3 minutes.
- Add spices and saute for another 2 minutes.
- Add ground beef. Cook, breaking up, until browned.
- Drain. Spread in bottom of 13" x 9" pan.
- In small mixing bowl, combine dressing and sour cream. Spread over beef.
- Spread sauerkraut over dressing mixture.
- Sprinkle with caraway seeds
- Spread shredded Swiss over all.
- Bake 25-30 minutes, until cheese is browned.
- Let rest 10 minutes before serving.
