Cheap Reuben Casserole

INGREDIENTS

  • 2 Tbsp fat or oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/4 tsp ground dried juniper berries
  • 2 lbs ground chuck
  • 1/2 c Russian dressing
  • 1/2 c sour cream
  • 1 lb sauerkraut, squeezed
  • 1 tsp caraway seeds
  • 8 oz grated Swiss cheese
  • salt and pepper to taste

PREPARATION

  1. Heat oven to 375
  2. In a large saute pan, over medium, heat the fat/oil. Add onion and garlic.
  3. Sweat until translucent, about 3 minutes.
  4. Add spices and saute for another 2 minutes.
  5. Add ground beef. Cook, breaking up, until browned.
  6. Drain. Spread in bottom of 13" x 9" pan.
  7. In small mixing bowl, combine dressing and sour cream. Spread over beef.
  8. Spread sauerkraut over dressing mixture.
  9. Sprinkle with caraway seeds
  10. Spread shredded Swiss over all.
  11. Bake 25-30 minutes, until cheese is browned.
  12. Let rest 10 minutes before serving.
