Cheese-Stuffed Meatballs in Cream Sauce

INGREDIENTS

Meatballs

  • 1 tsp blk pepper
  • 1 clove of garlic
  • 1 med green onion, finely diced
  • 1/4 cup chopped sweet red pepper
  • 1 1/2 ground beef
  • 3 eggs
  • 8 oz sharp cheddar cheese

Sauce

  • 1 cup of heavy cream
  • 1 beef bouillon cube or 1/2 cup of beef broth

PREPAATION

  1. preheat oven to 424
  2. cut cheese into one inch cubes
  3. beat eggs & mix all ingredients together except cheese
  4. mold around a tbls of meat around the cheese to form a round shape meatball
  5. place on cookie sheet with foil on it
  6. spray with cooking spray
  7. bake 10-15 minutes until done & the cheese has melted.
  8. heat sauce ingredients over medium/low.
  9. add meatballs.
  10. let it cook about 15 minutes on low/med
