Cheesy Chicken Thighs

INGREDIENTS

  • 8 thighs, skin removed
  • 2 eggs, beaten
  • 1 c almond flour
  • 1/2 c parmesan
  • 1/2 tsp pepper
  • 8 slices mozzarella

PREPARATION

  1. Heat oven to 375.
  2. Line baking sheet with parchment
  3. Mix almond flour and parmesan and pepper.
  4. Dip thighs in eggs, then dredge in almond flour mixture.
  5. Place thighs on prepared baking sheet; top each with a slice of cheese.
  6. Cook for 1 hour or until done.
