Cheesy Chicken Thighs
INGREDIENTS
- 8 thighs, skin removed
- 2 eggs, beaten
- 1 c almond flour
- 1/2 c parmesan
- 1/2 tsp pepper
- 8 slices mozzarella
PREPARATION
- Heat oven to 375.
- Line baking sheet with parchment
- Mix almond flour and parmesan and pepper.
- Dip thighs in eggs, then dredge in almond flour mixture.
- Place thighs on prepared baking sheet; top each with a slice of cheese.
- Cook for 1 hour or until done.
